Description
Green onions are small to medium in size and grow in clusters of elongated, straight leaves and narrow, slender bases.
The dark green leaves are smooth, stiff, and hollow with small, central tubes. Connecting into the leaves, the white base is dense, succulent, and firm with small white roots growing from the bottom of the base.
Green onions are crisp and juicy with a grassy, sweet, and slightly pungent flavor that is milder than mature onions.
The terms “scallion” and “green onion” refer mostly to the age of the plant. Though some species of onion will only produce either scallions or green onions, it’s possible to source them from other types of onion
According to Tufts’ Health and Nutrition Letter, onions are healthy both cooked and raw, but raw onions have higher levels of sulfur compounds, which may help protect your body against cancer, reduce “bad” cholesterol production, and lower your body’s blood sugar.
